March ~2011~





"I think something's coming that we haven't seen in a looooong time."

And here it comes.

This could be exciting, dangerous, or both, but whatever it brings,

we are thanking the Lord for the much, much needed rain.

Hog Hunting

Hog hunters, day 1.



Hog hunters,

Day 2.


Day 3, 4 and 5 looks just like 1 and 2.

Thought we'd spare you all the graphics, once again.

Story behind the pic. :


You know all the previous hog hunting days,

well, with all the hunting, there was lots of butchering,

which means lots of full freezers.


Well, one little freezer (5 feet long) decides to rebel and stop working!!!

Which means we have to can or cook all the meat this little freezer could hold!!

This part is done,

now on to the next part.
These were in the freezer, too.
Soooo, C gets ready to make something with blueberries.

Looks delicious......
and tasted just the same.
Thankfully the best cook in all of North Carolina was still here visiting,

so we called for reinforcements.
We'd never canned meat before, but always wanted to,

so now we have our chance.

(Nothing like learning under pressure!!)

During all of this our A/C went out and it was REAL hot,

and with every cooking appliance we have going full blast,

it's REAL, REAL hot.

Dipping hot grease to put in the jars.

(Be careful Chrisch.)
YOWZA!! I think my flesh is melting!
Mary's first BIG canning day.
Lotsa Meatsa Balls
We saved all this lard from the hogs. It was in the freezer, too.

But we needed it for canning, so it worked out perfectly.

(Wild hog meat has no fat, so you have to add it.)

Playing or working,

that is the question.
Time to cut and cook or do something with the ribs.
Partners in the kitchen.

(Thank you Mr. & Mrs. McIntosh for always ready to help, anytime.)

You're the Best!!

It canned up great and tastes delicious.

I think we'll can our meat from now on.
After a day of canning Uncle Ward invited us down for a fish fry.

He had caught 60 fish he needed to share.


And we were glad to share 'em. Real glad!
